When Elrond gives Aragorn Anduril, he advises Aragorn to summon the Army of the Dead. As Elrond convinces Aragorn:

You're outnumbered Aragorn. You need more men.

Aragorn agrees with Elrond. When Aragorn came out to the camp with his horse, Brego, Gimli interrupts him. Aragorn says to Gimli to stay, but the dwarf refused. But Legolas contradicts Aragorn. Aragorn agrees that Gimli and Legolas can join him on the Paths of the Dead. When the three travellers are on their horses, the Rohirrim Soldiers are wondering "Why are they leaving at the eve of Battle?" Gamling thinks that they leave because there is no hope. Theoden disagrees with him by replying "He leaves, because he must". So why didn't Aragorn tell Theoden where are they going?

...at least in the books.

Aragorn was silent for a moment. ‘Three days,’ he murmured, ‘and the muster of Rohan will only be begun. But I see that it cannot now be hastened.’ He looked up, and it seemed that he had made some decision; his face was less troubled. ‘Then, by your leave, lord, I must take new counsel for myself and my kindred. We must ride our own road, and no longer in secret. For me the time of stealth has passed. I will ride east by the swiftest way, and I will take the Paths of the Dead.

‘The Paths of the Dead!’ said Théoden, and trembled. ‘Why do you speak of them?’ Éomer turned and gazed at Aragorn, and it seemed to Merry that the faces of the Riders that sat within hearing turned pale at the words. ‘If there be in truth such paths,’ said Théoden, ‘their gate is in Dunharrow; but no living man may pass it.’

‘You will do as you will, my lord Aragorn,’ said Théoden. ‘It is your doom, maybe, to tread strange paths that others dare not. This parting grieves me, and my strength is lessened by it; but now I must take the mountain-roads and delay no longer. Farewell!’

The visit from Elrond in the movie is a creation by Peter Jackson. In the books, Aragorn is visited by Elrond's son, Elrohir who brings him a message from Elrond.

‘I bring word to you from my father: The days are short. If thou art in haste, remember the Paths of the Dead.

In fact, Aragorn was already carrying Anduril in the books...so it seems the scene was to have Elrond at least partially involved and have another refernce to Arwen in the movie.

Any conversation between Aragorn and Theoden therefore, took place, off-screen...or Jackson just left it out entirely.

Did Théoden know where Aragorn was going?

Aragorn: They do not come to destroy Rohan's crops or villages, they come to destroy its people\u2014down to the last child. Th\xe9oden: What would you have me do? Look at my men. Their courage hangs by a thread.

Why did Gondor not help Rohan?

The armies of Gondor were spread thin and thus it could not provide any extra forces to help Rohan. Large forces were not possible to gather for their own defense, so there was no way for them to send a significant number to aid Rohan.

Why does Aragorn leave the camp the night before they are to leave for battle?

In LOTR, Return of the king, Aragorn leaves camp to recruit the lost warriors of Gondor for the battle for Minas tirith after Elrond tells him to. He, Legolas and Gimli leave, whilst dozens of men watch. All men of Rohan believe that they leave, because Aragorn doesn't think Rohan can win.
