When The Bride is in the Pussy Wagon in the hospital car park, thirteen hours elapse (which is stated in film as the time it took for her wiggle her toes) - surely during this time someone would have noticed Buck was dead and the police would have been called?

Would this have not led to Buck's car being searched as well?

Is this a deliberate mistake or an oversight?

When Beatrix wakes up it's night. You understand it because everything is dark. When we see the scene of Beatrix laying in the bed before the mosquito bites her waking her up, the camera shows the room with a circular movement and you can clearly see the window being dark, the only light comes from the lamps above the beds.

This means that most of the hospital personnel is sleeping and that only those who have a night shift will be there at the hospital, one of them being Buck.

In the Kill Bill: Vol. 1 FAQ on imdb, there is a question that says "Are we really supposed to believe that she can stay in a dead guy's truck for 13 hours without the cops finding her?"

And the answer confirms what I said, also adding other theories (I added the numbers 1 and 2) and repeating what VoT said in his answer (emphasis mine):

No, just like we are not supposed to believe that arterial spray is that insane and that a very, very old Chinese man can stand on the tip of an outstretched sword (as happens in vol. 2). Seeing as how the truck wasn't stolen, they may not have found it necessary to check it. (2) The Bride also takes the keys to Buck's truck, and without those for identification, no one else might have known which car belonged to Buck.

Assuming that she stashed Buck in her room, it took time to discover its dead body. Since she was in coma state, her room wasn't checked too often by the hospital personnel (maybe no more than twice a day).

In addition, 12 hours isn't an unusual shift for a nurse, so its plausible that it took a lot of time before someone noticed him missing.

Despite that, yes, it could be a deliberate mistake.

This plot crater is even worse than that. Here is the chronology:

  1. The Bride kills Buck and steals the Pussy Wagon.
  2. The Bride flies to Okinawa and waits for a month while her custom sword is being made.
  3. The Bride flies to Tokyo and collects body parts.
  4. The Bride flies back to Texas and picks up flashy, bright yellow Pussy Wagon (which I presume was left unnoticed in long term airport parking) and drives to California to kill Vernita Green.

So, this entire time, nobody was looking for the stolen truck of a murder victim?
