In Gretel and Hansel (2020), the witch spends the movie trying to explain to Gretel that she has powers, that Gretel is like the witch. She says they come from the same rotten material. The entire dialog made me think it was because Gretel was female and females inherently have powers.

But, we see that there are plenty of girls among the children that the witch has eaten. So did the witch not eat Gretel because she had powers and the other girls did not, or would the witch have eaten Gretel for her refusal to eat Hansel and become what the witch wanted?

Did Hansel and Gretel get eaten?

A witch who lives in the gingerbread house enslaves Gretel and forces her to feed Hansel so that he may grow big for the witch to eat. The children trick the witch and shove her into her own oven before she can eat Hansel. They return home, and their mother dies shortly after.

Did Gretel cut her finger off?

Gretel takes Hansel, and the two go on a lengthy quest to find and free the sons. In the process, Gretel even cuts off her own finger to use as a key that will unlock the bird-boys' prison. The birds become boys again. They invite Hansel and Gretel to return home with them, but the children refuse.

Hansel and Gretel were the son and daughter of a king and queen. In order to save the life of a loyal servant, they had to chop their children's heads off, so the children thought that after that, they should probably go and find new parents.
